Believe it or not, picnic season is here again. Hallelujah. You've entered to win yourself a genius mat to sprawl out on (right?!), so not it's time to get your picnic recipes in order. While you could dive into the big black hole that is Pinterest, you'll likely come out with two new bathing suits, a sweater for your dog, a plan for the nursery room you won't need for many years and not a single edible idea. We don't want that, so we pulled together a few of our favorites for you.

Eggplant, Prosciutto & Pesto Pressed Picnic Sandwiches

Pesto is the first thing that comes to mind when I think picnic. And Morgan over at Host the Toast knows how to make a mind-blowing pesto sandwich, layering grilled eggplant over fresh mozzarella over roasted red peppers over prosciutto all on top of homemade pesto smeared ciabatta. Simply brilliant.

Peaches are already cropping up in the produce aisle. While you could simply throw a few slices in a baggy, getting a bit more creative won't take much effort — especially if you follow Two Peas & Their Pod's lead. With just five ingredients, this gorgeous salad really is easy peasy.

Maybe you're looking to bring out the big guns with something a little more... down home. Eyes will surely light up when you pull out a batch of homemade fried chicken. Even better, Andrea over at Viet World Kitchen puts a fresh spin on this American classic with lots of lime, rosemary and a Thai sweet chili sauce.
