We came across this easy and tasty recipe from an Olympic skier featured in SELF magazine. We trust anything a super athlete gobbles up. These little bites are ideal for on-the-go snacking. We'd throw one bar into an individual baggie then into an eyeglasses case to protect it (genius, we know) and take them on day hikes, camping, or for emergency energy on a marathon shopping trip.
DIY energy health bar
1 cup peanut or almond butter
1 cup honey
2 cups instant rolled oats
1 cup blueberries
1/3 cup chocolate protein powder
1/2 cup coconut flakes
1 cup flaxseed
In a saucepan, over medium heat, combine peanut butter and honey, stirring well. Remove from heat; stir in oats, blueberries, protein powder, coconut flakes, and flaxseed. Pour into a square glass baking dish and freeze for 1 hour. Remove and cut into bars. Store in fridge for up to a week.
